Sympathy is for the Birds!

Some of you may think this post is a little sadistic since I show pictures about geese and tell how graceful they are then turn around and tell you how to eat them. Ha! Sorry that's how we live on the Circle T we hunt animals, then we eat them!


The last few months I've had some back yard visitors. They come every afternoon and walk around with the cows. They are so pretty and graceful. Yesterday we had two other geese come fly to the pond behind my house and the two geese in my back yard started honking and fluffing up their feathers and flapping their wings. It was fun to watch.


I watched them for a long time, then Banjo decided to go investigate...

...and they flew off.



Sean loves to duck and goose hunt. We had a bunch of duck and goose meat in the meat freezer in his mom and dad's storage building. We also had my first deer skin in the freezer we were going to have tanned, a huge red fox Sean was going to mount, and a mallard and hen we were going to mount, along with a bunch of duck wings that we were going to train Birdie with. Someone accidentally unplugged the freezer and when Sean went over there to get some bird wings, he almost fainted from the smell, everything was ruined! He and I both were so disappointed because I love duck and goose meat. I have a great recipe for goose burgers I found in the Ducks Unlimited Magazine. For those of you who think that duck and goose is too gamey, this recipe will blow you away! It is amazing how great these burgers taste, not at all gamey and not at all tough and actually pretty juicy.









Goose Burgers
1/3 pound patties
Prep Time: 15 Minutes
Cook Time: less than 10 Minutes
Serves: 4
Ingredients:
2-3 skinless goose breast fillets, cut into one-inch pieces
1/4 pound smoked bacon, diced
1 cup canned diced tomato, drained
1 tablespoon sweet pickle relish
1 egg
1/2 cup Italian breadcrumbs (since I'm gluten free I used gluten free
breadcrumbs)
1/2 teaspoon freshly ground black pepper
1/3 teaspoon of table salt
First place the goose breast pieces in a food processor. Pulse a few times
until the meat is thoroughly ground. If you don't have a food processor just
chop the meat very finely with a knife.


Second, in a large bowl, combine the ground goose with the next six
ingredients and mix well. Add breadcrumbs, salt, and pepper, and mix until firm
enough to hold together in patties. Form into 3/4 inch thick patties.

Place on a medium-hot grill or in a hot skillet and brown evenly on both
sides to desired doneness, about four minutes per side, place cheese on top to
until melted, and serve with hamburger buns and all the condiments!

Since all our goose meat was ruined the last time I made this I used
hamburger meat instead and it was still delicious. Sean loves spicy stuff so i
chopped up some jalapenos and mixed them in too, it made it so much better!
